Makes 1 9×13 cake

So my sister came home from college a few weeks ago, and I wanted to welcome her with a sweet surprise. My sister’s motto is that if it doesn’t have chocolate somewhere in it, then it’s not a dessert. So, narrowing down what to make for her wasn’t too difficult.
This is such an easy recipe. Really, all there is to it is to make a pan of brownies (boxed, if you’d like) add some chocolate chips on top, spread some ice cream on that, and top with crushed Oreos, freeze, and BOOM! Any chocolate lovers’ favorite summer dessert. Here, I use bittersweet chocolate in the brownie for a really nice dark chocolate flavor, which I suggest because you’re gonna get a ton of sweetness from everywhere else. Yum!
4 ounces chopped unsweetened chocolate (the better the chocolate, the better the brownie)
¾ cup unsalted butter
2 cups sugar
2 ½ teaspoons real vanilla (use the real stuff)
3 lightly beaten eggs
1 cup flour
1 ½ teaspoons salt
Optional: 1 tablespoon instant espresso powder
2 cups semi-sweet chocolate chips
ICE CREAM LAYER:
2 containers of Talenti’s Double Dark Chocolate ice cream (or your favorite chocolate ice cream)
30 Oreos, chopped into chunks (original recipe says 15, I personally thought this was very weak. Go with 30!)
WHIPPED CREAM LAYER:
¾ cup heavy cream
½ cup confectioners’ sugar
½ teaspoon vanilla
2 tablespoons chocolate shavings (from a block of chocolate), for garnish
Make Brownie Base: Preheat oven to 350° and grease a foil-lined 9 x 13″ baking pan; set aside.Melt chocolate & butter in microwave for 2:15 minutes and stir. Stir in sugar, then vanilla, then eggs, then salt, espresso powder (optional) & flour. Pour into prepared pan and bake for 26 minutes (until center is just set). Do not turn oven off…
Chocolate Layer: Sprinkle chocolate chips evenly over just-cooked brownies and place back in oven for 2 minutes.Spread melted chips (using an offset spatula) until even across surface of brownie. Allow to cool completely before moving on to the next layer.
Ice Cream Layer: Spread ice cream across cooled brownie/chocolate base.*Store in freezer until you are ready to move on to next step.
Oreo Layer: Sprinkle chopped Oreos across ice cream layer. Store in freezer up until you plan to serve.
Whipped Cream Layer (I didn’t make this layer because my sister doesn’t like whipped cream): In a large mixing bowl, beat cream with sugar and vanilla until soft peaks form.Spread over Oreo layer and sprinkle shaved chocolate over top.
Serve dessert immediately! You can scrape whipped cream off and freeze, then make fresh whipped cream to top again when you want the rest of the dessert.
